
INGREDIENTS
8 eggs (I usually do 5 whole, 3 whites.. or however you prefer)
1/2 c cottage cheese
1/4 c shredded cheese of choice
2 cups veggies of choice
1 c cooked quinoa
1.5 tsp onion powder
1.5 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/8 tsp red pepper flakes
DIRECTIONS
Preheat oven to 350, spray muffin tin generously with cooking spray. **I use a silicone muffin tray and it works a million times better! No sticking!!**
Beat eggs in large mixing bowl. Add cheeses and spices, stir to combine. Add quinoa, veggies (I usually do broccoli) and mix.
Fill each muffin cup 3/4 full, top with a little shredded cheese (if you want). Bake 20 minutes. Broil for a couple minutes at the end for a crispier golden brown top (optional). Let cool for 10 minutes then serve.
Refrigerate for up to 5 days. These can also be frozen for later use!!

What the heck is an FFC and why do I include them in my nutrition? A fiber filled AKA “good” carb is essential to our bodies. Think of it as energy or fuel. Think about it.. when do you need the most energy? For most of us, it’s in the morning when we’re gearing up for our day and then around midday when we still have a few more hours of work to power through and whatever after work hustle and bustle we’ve got going on! Carbs are not the enemy, they are full of life giving energy!
