
I was kinda “over” spaghetti squash… until I saw THIS
Say whaaaat pizza that actually tastes delicious but also slightly healthier? I’m down to at least TRY it!!.
Jet’s Pizza (and their amazing Ranch) will always have my heart. And while I’m a big believer in indulging and livin that 80/20 life.. what if you’re craving pizza and it’s not your normal treat day/meal or you’re dialing in and wanting to stick closer to your nutrition plan? Recipe
- 4 cups cooked spaghetti squash, shredded
- 1 large egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried oregano
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 8 oz cooked chicken breast, sliced
- 1/4 medium red onion, thinly sliced
- 5 fresh basil leaves
- 2 cups fresh arugula
Preheat oven to 400. Line a large baking sheet (or pizza stone) with parchment paper and lightly coat with cooking spray. Set aside.
Using a clean kitchen towel or paper towels, squeeze as much water as possible from spaghetti squash and place in medium mixing bowl.
Add egg, Parmesan cheese and oregano to squash and mix well.
Place the squash mixture in the center of the prepped baking sheet; using damp hands, press into a thin circular shape, about 1/4 inch thick. Bake for 20 minutes or until the top is dry and the edges begin to brown. Remove from oven.
Spread marinara sauce in an even layer around the crust. top evenly with mozzarella cheese, chicken and onion. Bake for 8-10 minutes or until the onion softens and cheese melts.
Top with basil, cut in half. Divide between 2 plates. Serve each with 1 cup arugula.
