You’re gonna want to save this one!! THE BEST weeknight recipe ever. And it all started with a crockpot!
I don’t know about you but taco night is a staple in our home. Since starting my nutrition plan, I usually do a taco “bowl” over cauliflower rice but for this I went with the mini corn tortillas aka street taco style!
The carnitas took literally 5 minutes to prep, cooked itself while I was at work, and was fall apart amazing by the time I got home.
Paired with a couple quick + easy toppings, this is one meal EVERYONE will love. We will def be putting this into our weekly routine .
Carnitas: 2-3 lb pork loin
- Dry rub:
- 2 TBSP chili powder (I used a little less since I prefer milder heat)
- 2 tsp cumin
- 1 tsp ground coriander (I left this out- didn’t have it!)
- 1/2 tsp cloves
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp oregano
Mix together, rub all over pork loin, set pork loin in crock pot.
Pour in 1 1/2c water, add 1 bay leaf.
Cook on low 6-8 hours, shred about 30 minutes before cook time is up and let it soak up all the juices!
- 1/4c Greek yogurt
- 1/4c mayo (omit to make even healthier!)
- Juice of 1/2 lime
- 1/2 tsp chili powder
- 1/2c crumbled cojita cheese (omit to make healthier)
- 2 TBSP fresh cilantro, chopped.
I added one scoop of the “sauce” to some slaw mix to create a creamy crunchy topping and also added some avocado! And added a big scoop to a can of corn to make “street corn”!
I also quickly cooked the corn tortillas in my cast iron skillet over med high heat to crisp them up a little bit (used just a quick shot of avocado oil in the pan). 1 minute-ish on each side. Be sure to watch them so they don’t burn!.
Save this for a weeknight easy meal and share with all your friends!! It makes a good amount! Jeff had 5, I had 3 and there’s plenty left over for more street tacos, pork sandwiches, you name it! Enjoy!!
